Chereen's "Lazy Lunch" Salad
Spicy greens salad with smoked yellow tail, cucumber, red onion, and lemon
If you’re like me, packing a lunch ahead of time is something that’s crossed your mind, but never actually come to fruition. This incredibly simple, delicious, and filling Lazy Lunch Salad came to be when I was starving, and needed to quickly throw something together. Any greens or lettuce will do and any “toppings” you may have kicking around in the produce drawer will work great! If you have a ripe avocado on hand, even better! (Yes, I know its not local, but sometimes this California girl needs her fix!)
Heres what I used:
Salad greens
Sliced onion and cucumber
Lemon
Salt and pepper
High quality, sustainably harvested canned fish in olive oil (a couple of my favorite brands are Wild Planet and Bela)
Throw the greens, onion, and cucumber on a plate. Open the can of fish and drizzle the delicious olive oil over the salad. Place the fish over the salad and give that lemon a generous squeeze. The tasty, slightly smoky olive oil and lemon makes the perfect quick vinaigrette! Season to taste with salt and pepper, and mangiamo!
