Heirloom Tomato BLT

Heirloom tomatoes, local bacon, local greens, lemon and herb aioli, and local sourdough

Sometimes just a sprinkle of salt can make a juicy slice of tomato sing! When I’m wanting a little more, there’s no better sandwich to show off the amazing flavor of sun ripened heirloom tomatoes than a classic BLT. Of course, this one is made with everything local and my favorite twist on your basic mayonnaise.

Lemon and Herb Aioli

2 local egg yolks

2 Tbsp dijon mustard

1 garlic clove, minced

1/4 C fresh lemon juice

2 Tbsp freshly chopped herbs (basil, parsley, and dill are a few of my faves!)

1 C canola oil (or other neutral oil)

Salt and Pepper to taste

1`. Whisk together the egg yolk, dijon mustard, lemon juice, and minced garlic.

2. While whisking rapidly, slowly drizzle in the canola oil until an emulsion starts to form. Continue whisking and incorporating the oil until thickened and emulsified. This recipe makes a thinner aioli. To make it thicker, whisk in more oil.

3. Stir in chopped herbs and season to taste with salt and pepper.

*Raw egg is not recommended for infants, the elderly, pregnant women, or people with weakened immune systems


Heirloom Tomato BLT

This recipe is for one open faced sandwich, but maybe make two so you don’t have to share! ;)

2 ripe heirloom tomatoes

4 slices cooked local bacon

2 thick slices crusty sourdough bread

lemon herb aioli

Fresh greens

Salt and Pepper

  1. Lightly toast your slices of sourdough bread.

  2. Slather generously with lemon herb aioli

  3. Top with greens, heirloom tomato slices, and bacon.

  4. Sprinkle lightly with salt and pepper…fend of your friends/partners/pets from your tasty treat or make them one too!
